Colombia Raspberry Co-Ferment is a vibrant, fruit-forward single origin that showcases the full expressive potential of modern coffee processing. It’s part of our Limited Release Black Bag Series – coffees that embrace innovation and explore how far flavour can go when creativity meets precision.

Produced by Edwin Noreña at Finca Campo Hermoso in Quindío, Colombia, this coffee reflects a meticulous, experimental approach to fermentation. Known for pushing boundaries, Edwin combines deep processing knowledge with controlled co-fermentation to unlock entirely new flavour dimensions in the cup.

This lot is a carbonic natural co-ferment, where whole coffee cherries undergo fermentation in an oxygen-limited environment with raspberries introduced during the process. The result is intensely layered and fruit-driven, leaning toward syrupy, macerated character rather than fresh fruit – bold, concentrated, and unmistakably unique.

Expect notes of cherry syrup, strawberry rhubarb jam, and kombucha-like acidity, supported by a juicy sweetness and a lingering, candy-like finish.
