The coffee growing process in Cauca begins with the careful selection of seeds. Farmers plant these seeds in nurseries, where they are nurtured until they are strong enough to be transplanted. The coffee plants are then grown under the shade of taller trees, which protect them from direct sunlight and help maintain the necessary humidity levels. Once the coffee cherries are ripe, they are hand-picked to ensure only the best quality cherries are selected. This labour-intensive process is crucial for maintaining the high standards of Cauca coffee. The cherries are then processed using the washed method. The cherries are pulped to remove the outer skin and then fermented to break down the mucilage. After fermentation, the beans are washed to remove any remaining residue and then dried.
