Once the coffee cherries are ripe, they are hand-picked to ensure only the best quality cherries are selected. This labour-intensive process is crucial for maintaining the high standards of Cauca coffee. The cherries are then processed using the washed method. The cherries are pulped to remove the outer skin and then fermented to break down the mucilage. After fermentation, the beans are washed to remove any remaining residue and then dried.
